I woke up yesterday morning and wanted pancakes! But I didn't want to feel bloated afterwards, so I thought I'd try playing with some gluten free flour I had in the pantry. They were yummy! And so simple, they were ready in no time.
Next time I'll try them with my own gluten free flour mix.
500g almond milk
200g gluten free plain flour
40g coconut oil
2 tbs maple syrup
Place in Thermomix or food processor and mix for 30 seconds, Speed 5.
Cook in hot frying pan, with a little coconut oil. Make sure they are really thin, otherwise they tend to be a little doughy.
Serve with fresh fruit or top with a little more maple syrup.
